Sweet Cheeks Coca Cola Cake

As you may know, I'm very fond of Coca Cola cake, and have been experimenting with the original recipe I found on pinterest. The first time was a disaster. The second one was tasty, but not too pretty. So I kept trying (and enjoying the practice cakes), and eventually I got the perfect combination of amazingly delicious and pretty enough to eat. So I would like to share that recipe with all of you!


Sweet Cheeks Coca Cola Cake

Cake Ingredients: 
  • 2 cups flour
  • 1 3/4 cups sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 cup butter
  • 1 1/2 cups mini marshmallows
  • 1/4 cocoa powder
  • 1 c. coca-cola
  • 1/2 c. buttermilk 
    • You can buy powdered buttermilk in the baking section, and just re-hydrate it according to the directions to get 1/2 c. liquid buttermilk. Saves on buying the stuff from the milk section and then having extra.
  • 2 eggs
  • 2 tsp. vanilla
 Glaze Ingredients:
  • 1/2 cup butter
  • 3 tbs. cocoa powder
  • 1/3 cup coca-cola
  • 1 tbs. vanilla
  • 16 oz. powdered sugar, or more to get a consistency you like
  • 1 cup chopped pecans
Instructions:
  1. Preheat oven to 350, and then grease and flour a bundt pan.
  2. Mix the first list of cake ingredients together.
  3. In a saucepan over medium/high heat, stir the second list of cake ingredients together until boiling.
  4. Remove from heat, and add to the first list of ingredients. Whisk until combined. 
  5. Whisk in third list of cake ingredients - the eggs and vanilla. 
  6. Bake at 350 for 30 minutes or until cake tests done. 
  7. Make the glaze. Mix the first list of glaze ingredients in a saucepan and bring to a boil.
  8. Remove from heat, and slowly stir in the powdered sugar, then the pecans. 
  9. Pour glaze over cake. Enjoy!
